Domaine Billaud-Simon

This historic domaine, founded in 1815 and owning 17 hectares of vineyard including four Grand Crus and produces some of the very finest expressions of Chablis. Most of the wines see no new oak. The domaine was purchased by legendary Côte d’Or producer Domaine Faiveley in 2014. Since Faiveley’s purchase of the domaine in 2014, winemaker Olivier Bailly works with Faiveley’s Technical Director Jérôme Flous. There has been a further refinement in style at Billaud-Simon, with slightly earlier picking and reduced percentages of new oak. The wines have never been better, with a vivid purity of fruit and tension. These 2018s are a great success for this forward-looking domaine.
