A couple of months ago, I tried my hand at making tepache. It’s pretty cool stuff, if you’re into fermentation. This is, quite simply, the wine equivalent. Pineapple. Cinnamon. That salty home-fermentation tang. Even a dairy note of kefir. Quirky as a teapot cosy on a head of curls. The kind of wine that makes you want to go and tattoo Rupi Kaur poetry on the back of your hand. This was wonderful with soft, lemony fresh goat’s curd.
